- 135 gpacket raspberry flavoured jellypacket raspberry flavoured jelly
- 280 mlboiling waterboiling water
- 100 mlchilled vodkachilled vodka
- 180 mlchilled waterchilled water
- 8limeslime
- Watermelon seeds, to garnishWatermelon seeds, to garnish
Equipment
- Lime halves, used as serving vessels
Method
Halve the limes lengthways.
Score around the edge of the pulp with a small knife.
Scoop out the pulp with a spoon and discard.
Rinse and clean the lime rinds, then set aside.
Cut the jelly tablet into cubes.
Place the jelly cubes in a bowl and add the boiling water.
Stir until the jelly dissolves completely.
Add the vodka and cold water, then stir.
Pour the mixture into the lime rinds and refrigerate.
Once set, cut the rinds in half again.
Garnish with watermelon seeds.
Notes
Oranges or lemons can be used in place of limes, with different jelly flavours.
