  • 60 mlAperol
  • 30 mlsoda water
  • Cubed ice
  • Orange slice, to garnish

Method

  1. Fill a large wine glass to the top with cubed ice.

  2. Pour in the prosecco.

  3. Add the Aperol.

  4. Top with the soda water and stir once, gently.

  5. Garnish with a slice of orange.

Notes

The 3-2-1 ratio the drink is built on: three parts prosecco, two parts Aperol, one part soda. Pour in that order — Aperol is heavier than the wine and sinks through it, so the drink mixes itself without stirring the bubbles flat.
